The Just Right Time

The most important thing
is knowing
the just right time
to flip a pancake
before it burns.

You have to look
for the bubbles
when they come up,
and when the edges dry.

That's when you know
to check for color,
that golden brown,
and not a moment
sooner or later.

And that's not all
there's more,
you have to keep checking,
the second side
has to cook as well.

There's nothing worse
than a pancake
not turned over,
it's just plain sin
for good batter 
to go to waste.
